  Verdejo Yllera, Verdejo Vendimia Nocturna 2015 2015 Castilla Y Leon, Spain lemon curd, banana peel on nose- very refreshing Bright straw yellow color with greenish reflections. Thoroughly captivated by this elusive, luscious and complex white variety, this visit saw the beginnings of a journey that would define Yalumba’s white winemaking future.

In 1980 Yalumba planted 1.2 hectares of Viognier on the Vaughan vineyard, a property neighbouring the hallowed Yalumba grounds. This land, situated on the elevated slopes of the Eden Valley, represented the first significant commercial plantings of Viognier in Australia. More than twenty five years later, Yalumba is the true champion of this unique and seductive variety and celebrates the personality of Viognier with six individual wines in their collection.   Chenin Blanc Champalou, Vouvray 2018 Loire valley, France Balanced palatte, high acid, green apple, walnut, short finish- KB Favorite 12.5% Yes Zesty white wines that smell like flowers and lemon. Albariño, white Vinho Verde Vouvray is a French region made up of eight villages in the Touraine district of the Loire Valley. Situated on the northern banks of the Loire River, it has many magnificent gardens and romantic, stately castles. Vouvray is also home to the white Chenin Blanc grape variety, known locally as Pineau de Loire. The Chenin grown here makes a distinctive wine which reflects the place where it is from—clay, limestone and flinty soils give the wine a distinct and focused minerality and the cool climate helps to retain high acidity levels in the grapes. Depending on the weather each year and various winemaking techniques, Chenin can be made in dry or sweet styles. This aromatic grape imparts rich, nutty, floral aromas and flavors while leaving behind the taste of honey on the palate. These complex white wines have the unique ability to age for a long time, becoming even more interesting over time. Catherine and Didier Champalou started the winery shortly after graduating from viticulture school in 1983 and they have since become one of the most acclaimed producers in the area.

The stone fruit character follows through onto an exceptionally balanced, very delicate and fine textured palate showing a peach-melba character with an exquisite length and freshness. Albariño, white Vinho Verde “La Craie” (or “chalk” in French) refers to the abundance of white, soft rock in the area known locally as “Tuffeau.” High on the hills of Vouvray, one can tour the homes of locals who live in caves dug from this soft chalk. It is found in the vineyards as well, ensuring good drainage down the slopes and keeping the soil warm at night to help keep the roots from experiencing drastic temperature changes.

Grown on hillsides surrounding the villages of Entiklar and Kurtatsch, not far from the winery itself, the Gewürztraminer is allowed to get perfectly ripe. Vinified in a combination of stainless steel tanks and cement vats, the wine is matured on the fine lees for extra depth of character. The stainless steel preserves freshness while the cement allows the wine to breathe naturally. The final blend is a classic example of this variety.

Marsanne Following an established Bonterra custom, we’ve layered a little Muscat into the blend, adding to the exciting aroma of this wine. We followed our usual style of fermenting in both stainless (70%) and barrel (30%), with no malolactic fermentation. The wine is in oak for 8 months to gain a note of vanilla. Increasing use of stainless and cold fermentation provides ever fresher and decidedly forward fruit that leaps from the glass.

full-bodied wine with delicate structure. Our Chardonnay is 100% barrel fermented in French oak (33% new) using various yeast strains. After fermentation the wine remains in barrel on the lees (sur lie) for 10 months. A partial malolactic fermentation (30% complete) allows the wine to retain its natural acidity, while regular stirring of the lees (battonage) gives added complexity and richness.

Alain Combard purchased the property in 1992 after discovering its cool coastal climate and unique schist soils. “The schist in La Londe seduced my father,” says Alain’s daughter Magali, “schist and the sea make our style.”

Over a period of 25 years, the Combard Family grew Figuière to its current size of 210 acres. Additionally, Figuière purchases grapes from contracted growers in the Côtes-de-Provence. Magali Rosé is part of the “Signature” series, named after Alain Combard’s three children. The Signature series are produced from a blend of estate-grown grapes and purchased fruit. Magali currently runs the family business and is in charge of selling and promoting Figuière domestically and all over the world.
                           
8 Blend (Cinsault, Grenache, Vermitivo) Le Paradou, Cotes de Provence Rose 2018 Provence, France Watermelon rind on chalk (KB favorite) 13%     A joint project between the brothers Alex and Fred Chaudière of Château Pesquié and Eric Solomon, Le Paradou Côtes de Provence Rosé, is a blend of Cinsault, Grenache and Vermentino from a vineyard located in the heart of Provence, in the shadow of Sainte-Victoire, the picturesque peak immortalized by Paul Cézanne in more than 70 paintings.

This classic blend is made from grapes that are sustainably farmed on rocky limestone and sandy clay soils. At harvest the grapes are picked by hand in the early morning, cooled at the cellar and pressed whole-cluster to extract the lightest color possible. The wine is then fermented and aged in stainless steel tanks before bottling. The Cinsault provides this wine’s delicate fruit flavors reminiscent of raspberries and strawberries, the Grenache its color and spice, and the Vermentino its freshness and acidity.

It was first planted in 2000 to a mix of Dijon clones 115, 667 and 777, all grafted on low-vigor rootstock 101-14. I have been working with this vineyard since 2003 and have always been impressed by the quality of the Pinot Noir it produces. Dairyman sits in the southern alluvial plains of the Russian River Valley near the ocean, a region where cooling fog comes in through the Petaluma Gap in the morning and once again in the evening. Afternoon breezes help to soften the effects of the warm sun. In Dairyman, each vine has been trained up on a vertical shoot position (VSP) trellis, which both limits the growth and opens up the typically congested fruit zone. The combination of low-vigor rootstock and alluvial soil stress the vines, while the cool, coastal climate creates a long growing season that brings about small, concentrated and flavorful berries.

Mencia The grapes for Jesús Yllera Crianza are harvested by hand, which allows an initial selection of bunches in the field. Later a second selection is made in the winery. The tanks are filled by gravity, respecting the integrity of the grape as much as possible. The grapes are not destemmed before being placed in the tanks, thereby preventing the berries from breaking, and obtaining more fruit aromas in the final wine. During fermentation the wine is pumped over daily to extract more colour and control the temperature. Lastly the wine is clarified and racked and aged for 12 months in French oak barrels, half of which are new and half in their second year. Mencia "El Picaro" means rogue or rascal in spanish. The wine was aged in for 3 months in concrete tanks and 6 weeks in new French oak. Fermentation in concrete vats with a 15,000 kg capacity, temperature controlled to avoid surpassing 24ºC, thereby maintaining the fruit as well as the freshness that characterizes this wine. The malolatic fermentation is also carried out in french oak barrels. This wine has not been filtered nor clarified using aggressive methods to preserve its natural characteristics. 18 Tempranillo Matsu, El Recio   Toro, Spain  It begins with pleasant aromas of black cherry, plum, anise, chocolate, licorice and more. Tasting the wine reveals more ripe dark fruit with wonderful streaks of chocolate, vanilla and sweet spice notes wrapped up in a smooth round mouthfeel. Full-bodied, tannic and with good acidity, this is tasty stuff. It ends dry and long with lingering ripe fruit and touches of minerality. 14.5% Yes Tempranillo is earthy with rustic tobacco notes and high tannin. Mencia The wine was aged in for 14 months in second use French oak.  Fermentation and maceration for a duration of 3 weeks in reinforced concrete deposits of 15,000 kg. The malolactic fermentation is realized in French oak barrels, as well as its ageing for a duration of 14 months. This wine has not been filtered and is clarified without utilizing aggressive processes. Matsu is Biodynamic

Blending was completed in the late spring, after the wines fermented and subsequently aged separately for about 8 months. Half of the blend was fermented with native yeast. She then organises numerous parties and asks friends wine-growers to bottle a cuvee that she signs in the name of Marrenon.

When referring to wines made from Bordeaux grapes, the term "claret" is often used in the United Kingdom, but is seen less frequently on U.S. bottlings.Any grape cannot be over 90% A Bordeaux-style red wine from the Napa Valley, comprised of all five varietals , is hard to find. We’ve been lucky to source quality fruit from long time growers on both the valley floor and surrounding hillsides; and while finding Cabernet Franc, Petit Verdot and Malbec can be difficult, their contributions to the resulting wine make it worthwhile. A prime example of our house style—accessible, massive, and memorable—the bottle empties quickly (a slight disappointment when discovered) for the bottle weight suggests differently, and searching for another bottle ensues. Then one day in my late teens, he told me it was time to get off the ranch and ‘go chase lions.’ I never asked him what he meant by that, because something inside me already knew. It’s been over 20 years now since he passed and I have been chasing lions ever since.”

32 Blend (Syrah, Grenache, Merlot) Fat Bastard, Pays d'Oc Bloody red 2016 Languedoc-Roussillon, France red fruit, raspberry, cherry, pepper, plum, black cherry 12.80%     Good friends Tierry (renowned French winemaker) and Guy (British wine industry rebel) created FAT bastard almost by accident. It started out as an experiment Thierry had going in the back of his cellar, leaving a barrel “on the lees” (yeast cells). He didn’t know what to expect, but when he and Guy tried the wine, Thierry exclaimed, with a strong French accent, ”Now zat iz what you call eh Phet bast-ard!” This very British expression perfectly described the wine’s wonderful color and round, rich palate, so that’s what they named it. In 1991, Véronique Torcolacci obtained her degree in oenology from the University of Toulouse. She joined Gabriel Meffre as oenologist in charge of quality before becoming head winemaker.

  Chenin Blanc Champalou, Vouvray 2018 Loire valley, France Balanced palatte, high acid, green apple, walnut, short finish- KB Favorite 12.5% Yes Zesty white wines that smell like flowers and lemon. Albariño, white Vinho Verde Vouvray is a French region made up of eight villages in the Touraine district of the Loire Valley. Situated on the northern banks of the Loire River, it has many magnificent gardens and romantic, stately castles. Vouvray is also home to the white Chenin Blanc grape variety, known locally as Pineau de Loire. The Chenin grown here makes a distinctive wine which reflects the place where it is from—clay, limestone and flinty soils give the wine a distinct and focused minerality and the cool climate helps to retain high acidity levels in the grapes. Depending on the weather each year and various winemaking techniques, Chenin can be made in dry or sweet styles. This aromatic grape imparts rich, nutty, floral aromas and flavors while leaving behind the taste of honey on the palate. These complex white wines have the unique ability to age for a long time, becoming even more interesting over time. Catherine and Didier Champalou started the winery shortly after graduating from viticulture school in 1983 and they have since become one of the most acclaimed producers in the area.

It is found in the vineyards as well, ensuring good drainage down the slopes and keeping the soil warm at night to help keep the roots from experiencing drastic temperature changes.

Malvasia, Torrontés, Aging potential: 6-8 yrs; This most ancient grape of the region is treated to some careful vinification that preserves its true varietal character. Grown on hillsides surrounding the villages of Entiklar and Kurtatsch, not far from the winery itself, the Gewürztraminer is allowed to get perfectly ripe. Vinified in a combination of stainless steel tanks and cement vats, the wine is matured on the fine lees for extra depth of character. The stainless steel preserves freshness while the cement allows the wine to breathe naturally. The final blend is a classic example of this variety.

Marsanne Following an established Bonterra custom, we’ve layered a little Muscat into the blend, adding to the exciting aroma of this wine. We followed our usual style of fermenting in both stainless (70%) and barrel (30%), with no malolactic fermentation. The wine is in oak for 8 months to gain a note of vanilla. Increasing use of stainless and cold fermentation provides ever fresher and decidedly forward fruit that leaps from the glass.

In 1980 Yalumba planted 1.2 hectares of Viognier on the Vaughan vineyard, a property neighbouring the hallowed Yalumba grounds. This land, situated on the elevated slopes of the Eden Valley, represented the first significant commercial plantings of Viognier in Australia. More than twenty five years later, Yalumba is the true champion of this unique and seductive variety and celebrates the personality of Viognier with six individual wines in their collection. full-bodied wine with delicate structure. Our Chardonnay is 100% barrel fermented in French oak (33% new) using various yeast strains. After fermentation the wine remains in barrel on the lees (sur lie) for 10 months. A partial malolactic fermentation (30% complete) allows the wine to retain its natural acidity, while regular stirring of the lees (battonage) gives added complexity and richness.

Alain Combard purchased the property in 1992 after discovering its cool coastal climate and unique schist soils. “The schist in La Londe seduced my father,” says Alain’s daughter Magali, “schist and the sea make our style.”

Over a period of 25 years, the Combard Family grew Figuière to its current size of 210 acres. Additionally, Figuière purchases grapes from contracted growers in the Côtes-de-Provence. Magali Rosé is part of the “Signature” series, named after Alain Combard’s three children. The Signature series are produced from a blend of estate-grown grapes and purchased fruit. Magali currently runs the family business and is in charge of selling and promoting Figuière domestically and all over the world.

This classic blend is made from grapes that are sustainably farmed on rocky limestone and sandy clay soils. At harvest the grapes are picked by hand in the early morning, cooled at the cellar and pressed whole-cluster to extract the lightest color possible. The wine is then fermented and aged in stainless steel tanks before bottling. The Cinsault provides this wine’s delicate fruit flavors reminiscent of raspberries and strawberries, the Grenache its color and spice, and the Vermentino its freshness and acidity.

During fermentation the wine is pumped over daily to extract more colour and control the temperature. Lastly the wine is clarified and racked and aged for 12 months in French oak barrels, half of which are new and half in their second year. I have been working with this vineyard since 2003 and have always been impressed by the quality of the Pinot Noir it produces. Dairyman sits in the southern alluvial plains of the Russian River Valley near the ocean, a region where cooling fog comes in through the Petaluma Gap in the morning and once again in the evening. Afternoon breezes help to soften the effects of the warm sun. In Dairyman, each vine has been trained up on a vertical shoot position (VSP) trellis, which both limits the growth and opens up the typically congested fruit zone. The combination of low-vigor rootstock and alluvial soil stress the vines, while the cool, coastal climate creates a long growing season that brings about small, concentrated and flavorful berries.

Zinfandel, Primitivo, Carignan garnacha is spanish version of grenache. ‘Alto Moncayo’ is the flagship of the winery. It is also another single-grape variety of Garnacha, from vines between 40 and 70 years old, aged in new barrels for 20 months

She then organises numerous parties and asks friends wine-growers to bottle a cuvee that she signs in the name of Marrenon.

61 Blend (Syrah, Grenache, Merlot) Fat Bastard, Pays d'Oc Bloody red 2016 Languedoc-Roussillon, France red fruit, raspberry, cherry, pepper, plum, black cherry 12.80%     Good friends Tierry (renowned French winemaker) and Guy (British wine industry rebel) created FAT bastard almost by accident. It started out as an experiment Thierry had going in the back of his cellar, leaving a barrel “on the lees” (yeast cells). He didn’t know what to expect, but when he and Guy tried the wine, Thierry exclaimed, with a strong French accent, ”Now zat iz what you call eh Phet bast-ard!” This very British expression perfectly described the wine’s wonderful color and round, rich palate, so that’s what they named it. In 1991, Véronique Torcolacci obtained her degree in oenology from the University of Toulouse. She joined Gabriel Meffre as oenologist in charge of quality before becoming head winemaker.

Dusty spice leads into the very long, dry finish. 14.5%   Merlot is can be lighter or bolder depending on how it’s made. Usually it’s fruit forward with smooth tannins. Corvina, Negroamaro, Cinsault The Rabble labels are renditions of historical wood block prints from the Nuremberg Chronicle (late 1400’s), textured and tactile, depicting nature’s wrath. Nature is ruthless when it goes ignored. This label illustrates the Apocalyptic Comet falling upon Florence with the Unicorn and Phoenix. The wine spends 10 months in French oak (20% new and 80% neutral). The grapes' naturally high acidity can make the wine somewhat tart with a slight, bitter almond note. The finish is sometimes marked with sour-cherry notes. In some regions of Valpolicella, producers are using barrel aging to add more structure and complexity to the wine. The small berries of Corvina are low in tannins and color extract but have thick skins that are ideal for drying and protecting the grape from rot.
