Instructions:
Acquire all ingredients and equipment/n Make sure station is clean and sanitary -
Ingredients:
10-20 pounds of chicken skins
cut to size of 2-3 fingers
1 gallon of water
1 cup of table salt
fresh herbs 2 rosemary
2 thyme
10 cloves of smashed garlic
All Purpose Breading (see recipe) -
Preparation:
Acquire all ingredients and equipment
Make sure station is clean and sanitary -

Mixing bowl

Liquid Measuring Cup
Whisk -
Prep Time:
24 hours -
Total Portions / Yeilds :
10-20 lbs -
Directions:
Mix water, table salt, herbs, and garlic and place in a hotel pan
Add skins, cover and refrigerate overnight
To bread, take a single chicken skin and dredge in all purpose breading
Lay on a 1/2 sheet pan, lined with parchment paper and repeat until the tray is full
Add another piece of parchment and start another layer
Freeze overnight
Taking a tray out at time (to prevent the skins from thawing), portion 4

Ingredients:
1 order of corks
1 grey scoop popper dip
1 yellow scoop garlic butter -
Preparation:
Place dough ball once through the top of the roller, then once through bottom
Flour the table, Cut long strips, then cut to shape of wine corks (finger width, about 2" long)
Roughly 10

Deep fry
Timer 1 or 5 (1:20)
Toss in a bowl with a yellow scoop of garlic butter and 1 grey scoop popper dip
Line a 1/4th sheet pan with small black platter sized parchment paper
Spread the corks evenly on parchment and top with 1 blue ladle of mozzarella cheese
Bake 1/2 length (3

Serve on a small black platter and top with parmesan cheese and fresh parsley -

Chips should be golden brown and completely cooked
